Nutritional, health benefits and usage of chia seeds (Salvia hispanica): A review

چکیده

As we enter the 3rd millennium, with improved life expectancy, and high media coverage of health care issues, people are becoming more aware interested in potential benefits nutritional support for disease control or prevention. The review aimed to gather published information regarding nutrition associated use chia seeds human health. Researchers have reported content form protein (15-25%), dietary fibre (18-35%), fat (15-35%) ash (4-6%). Apart from their rich content, can improve various food products when they blended mixed. This article reviews bioactive compounds, nutraceutical functionality development functional foods. Also highlights properties seeds, usage industry fortification seeds. results showed blending other produce nutrient dense that be regarded as a food.   Key words: Chia foods, nutraceuticals, fortification.
